Our Favourite Meatloaf Recipe

I know, meatloaf is really not glamorous, not really very pretty either, but made well with the right blend of ingredients, it is really good! Meatloaf sandwiches are even better in my books! My husband, was a meatloaf hater until he tried mine. He says I converted him. Here is my go-to meatloaf recipe that I adapted from the Eat, Shrink and Be Merry Cookbook. Makes enough for 2 dinners, and some sandwiches!

Ingredients:

  • 1 kg extra lean ground beef sirloin
  • 3/4 plain bread crumbs
  • 3/4 cup of your favourite barbecue sauce
  • 1/3 cup finely chopped parsley
  • 1/2 cup finely chopped onion
  • 1/4 cup grated parmesan cheese
  • 2 eggs
  • 2 cloves of garlic, minced
  • 1 teaspoon dried basil
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon freshly ground pepper

Directions:

  1. Line a baking sheet with non-stick aluminum foil (I like Alcan Slide), and preheat the oven to 350 degrees.
  2. Combine ground beef, bread crumbs, 1/2 cup of the barbecue sauce, parsley, onion, parmesan, eggs, garlic, basil, salt and pepper. Mix well using your hands (however handling lightly) and shape the mixture into a 5″ x 12″ loaf on the foil lined baking sheet.
  3. Spread the remaining 1/4 cup of barbecue sauce all over the top of the meatloaf.
  4. Bake the meatloaf for 1 hour, until it is nicely browned. Let stand 5-10 minutes before slicing.

Leftovers:

  • One of my favourites is a meatloaf sandwich!
  • Combine 1 heaping tablespoon of your favourite mayo with about 1 tablespoon of horseradish (I like polish horseradish). Decrease the horseradish or omit if you do not care for it.
  • Spread 2 pieces of white bread with equal amounts of the mayo/horseradish mixture, and top with meatloaf slices and lettuce.
