A favourite of mine from my Everyday Food Magazine. I love cheesecake, so these little treats are the perfect less-naughty indulgences! The recipe calls for non-fat cottage cheese, but I use either 1% or 2% as it makes the cheesecakes a bit creamier. They are SO good and I love the individual portions and the easy 8 ingredient recipe: cottage cheese, icing sugar, cocoa powder, flour, instant espresso powder, eggs, vanilla, and chocolate wafer cookies.

You bake the cheesecakes in muffin tins – so easy, and perfect individual portions . . . . .
I like to top the cheesecakes with a dollop or whipped cream and a sprinkle of cocoa.
