I’m not Irish but I am certain with my Scottish heritage that there must be some Irish in my bloodline somewhere! So, therefore I can’t not get into the mood for St. Patrick’s Day, it’s hard to resist! This is my favourite St. Patrick’s Day cupcake recipe courtesy of the Martha Stewart’s Cupcakes Cookbook.
The recipe is for Brown Sugar Pound Cake cupcakes (posted at marthastewart.com) with Bailey’s Irish Cream Frosting.

For the frosting which makes enough for 24 cupcakes use: 1 1/2 cups unsalted butter, 4 cups of icing sugar, 3 tablespoons of Bailey’s, and 1/2 teaspoon of vanilla extract. Beat together until light, fluffy and smooth.
I like to pipe my icing and then top with green sparkly sprinkles (my fave), but of course you can use shamrock shaped sprinkles or any other St. Patrick’s themed topping.
