Salmon with Bok Choy and Brown Rice with a Soy, Lime and Ginger Dressing


This has become one of my favourite salmon dishes. I love the soy, ginger and lime dressing you pour over the fish, greens and rice. It is delicious and super easy and fast to prepare. The recipe is from Martha Stewart’s Everyday Food and has a great video with the recipe. I follow everything exactly as directed – and have made this 3 times already, sooooo yummy and healthy too! Great for a “fishy” Friday!


Kara’s Notes:

– I use Uncle Ben’s Whole Grain Brown Rice that cooks in 20 minutes

– I substitute maple syrup for the agave nectar
