I have been pondering how to make another new baked Basa fish dish and this recipe is a winner with my family. The fish is spread with a creamy mayonnaise based sauce that includes freshly grated Parmesan cheese, herbs and spices and then is topped with panko crumbs giving the fish a crunchy topping. The results were fantastic and the kids really loved it too. I was thrilled! Ingredients:
- 4 Basa fish fillets (if frozen, defrost completely)
- 1/4 cup light mayonnaise (I like Hellman’s 1/2 the Fat)
- 1/4 cup freshly grated Parmesan cheese, plus a bit more for grating over fish
- 2 tbsp unsalted butter, softened
- 1/4 tsp dried basil
- 1/4 tsp garlic powder
- 1/8 tsp freshly ground black pepper
- Pinch of cayenne powder
- 2 tsp freshly squeezed lemon juice
- a bit of grated lemon zest (1/4 to 1/2 tsp)
- 1/4 cup of Panko crumbs (Japanese bread crumbs – I find them at the sushi counter at the grocery store)
- 1 tsp extra virgin olive oil
Directions:
- Line a baking sheet that will fit all 4 basa fillets, with non-stick aluminum foil and preheat the oven to 400 degrees.
- Pat fillets dry with paper towels and season both sides with salt and pepper.
- In a small bowl combine mayonnaise, Parmesan, butter, basil, garlic powder, pepper, cayenne and lemon juice and zest.
- Spread mixture evenly over the four pieces of fish. Grate a little more Parmesan over the fish before you sprinkle with panko bread crumbs.
- In another small bowl combine panko with olive oil and mix lightly. Sprinkle panko evenly over the fish.
- Bake at 400 for 15 minutes and then broil for an additional 2-3 minutes to brown the topping nicely.
- Remove from oven and serve with your favourite sides (we had mashed potatoes and asparagus).

In this recipe you never mentioned when to add the 1/4 cup of Parmesan cheese, I assume that you combine it with the mayonnaise mixture?

Thank you so much for this delicious recipe!! I had some Basa filets in the freezer and had no idea what to do with them that would be tasty. My father in law just tries to fry them and fails every time. This recipe was a big winner in our house and we will use it plenty more times!! Big love from Canada!

I made this today, using full fat Greek Yoghurt instead of mayo and it turned out fabulous! We absolutely loved it. The only other change I made was to use red pepper flakes instead of cayenne because we love it. I also used my home made spreadable butter because I didn’t soften any of the block butter I had.

WOW!!! THIS DISH IS AMAZING!!!
I used budget ‘Tesco’ White frozen Fillets (Alaska Pollock). I thawed them first and then followed your recipe. I amazingly did not have any Basil in the house apart from 2 fresh leaves, so chopped them and added a few chopped fresh parsley leaves to the mix. Also, didn’t have garlic powder so chopped 2 cloves finely. Again, used ‘clover’ margarine and used normal white breadcrumbs (created in my new professional food processor!) IT WAS ABSOLUTELY GORGEOUS, with new potatoes and seasonal veg.

Hello this looks delicious.. quick question, can I exchange the Panko crumbs with something else? what do you recommend will work as an alternative?

Hi Dana, I have not used an alternative to panko yet, however perhaps toasted white bread turned into crumbs would work. Toast a piece or two of white bread. Let cool and get nice and dried out on the counter, then cut into pieces, place in a food processor and make your own fine crumbs. I can’t guarantee it is as good as panko, but it may work! Keep me posted!

I didn’t have Parmesan cheese so used finely crushed feta and oregano instead and the Basa was a huge hit. The lemon rind is such a nice touch and I used finely ground whole wheat bread crumbs instead of the panko too. It was a huge hit!
