Janet & Greta’s Spinach & Artichoke Dip

Feeling a bit stuffed from Christmas and looking for a lightened up holiday appetizer for New Year’s? This is a perfect recipe, that is delicious and satisfying but has a healthy twist (white kidney beans). I love this recipe from Janet and Greta Podleski (the Eat, Shrink & Be Merry and Looneyspoons Collection authors – I highly recommend both books) and it is a hit every time I make it. I made a batch for the holidays and divided it into small baking dishes to bring out for celebrations between Christmas and New Years. I just bake it in my toaster oven and it is heated and bubbly in no-time. You can also freeze it in a freezer/oven proof baking dish and then just transfer it straight from freezer to oven. This would also make a delicious after-school snack for the kids (my kids love this dip) – again just freeze small portions in freezer/oven proof dish and pop it into the toaster oven after school and serve with whole grain crackers or pita and veggies.
