Pumpkin Pie with a Shortbread Crust

This was my pumpkin pie for Thanksgiving last year. Instead of the usual pie crust, I went with a Martha Stewart recipe for pumpkin pie in a shortbread crust. The results were fabulous, and the crust is delicious and so much easier than a rolled pie crust. The pumpkin and the cookie crust make a delectable combination especially with a hearty helping of whipped cream! Try it this year for your Thanksgiving dessert.
